چکیده
A real valorization of monovarietal extra virgin olive oils (EVOOs) through diverse sensory profiles is missing, hindering different uses samples with and leading to negative impacts on EVOO competitions consumer choices. The aim this research group EVOOs according similar chemical profiles. volatile phenolic composition the profile 46 are analyzed by head space-solid phase micro extraction-gas chromatography-mass spectrometry, HPLC-DAD, Panel Test; data used feed a k-mean algorithm aimed at clustering. non-monovarietal also included. It hypothesized that cultivar located in cluster, while randomly clusters. Two clusters identified; all belonging specific same cluster ones placed two significant attributes differentiating between belong descriptors compounds; compounds do not give differentiation. All result prevalence one cluster. differentiated organic (VOCs) originating branches lipoxygenase-pathway. Practical Applications: results will help toward (EVOOs), particularly, ones. In sense, clearly suggest use an adequate sheet for definition EVOOs. By way, during competitions, certain type compete against profile, just as it happens other types products.

The Compounds Responsible for the Sensory Profile in Monovarietal Virgin Olive Oils.
Monovarietal virgin olive oils (VOOs) are very effective to study relationships among sensory attributes, the compounds responsible for flavour, and factors affecting them. The stimulation of the human sensory receptors by volatile and non-volatile compounds present in monovarietal virgin olive oils gives rise to the sensory attributes that describe their peculiar delicate and fragrant flavours...

The purpose of this study was to investigate three types of extraction methods of extra virgin olive oil (EVOO) from the same cultivar (Ortice olive cultivar): traditional or pressing (T) system, decanter centrifugation (DC) system and a patented horizontal axis decanter centrifugation (HADC) system. Oil samples were subjected to chemical analyses: free acidity, peroxide value, ultraviolet ligh...
